This restaurant offers a gigantic bowl of broth with some various ingredients that are brought to the table seperately and then added to the boiling broth. You then get bottomless noodles for your soup. Every table has some sort of fiery chili pepper stuff on it that will clear out your sinuses pretty good when added to your soup. Don't use too much of that. Would highly recommend.

Authentic family-owned Chinese restaurant specializing in rice noodles. Choose your soup base, served boiling, into which you add 10 toppings (with extras you can order) including meat, tofu, wood ear fungus, etc.
I had the default soup base, a bone broth which was subtle and delicious, not overpowering. I did add the bean paste for extra flavour though. Noodles themselves are more slippery and a bit more gelatinous than pho, for example.
Free extra noodles, which is nice.
Overall a sorely needed breath of fresh air from the North American style Chinese food you usually see in London. Usually you'd have to go to uptown Toronto to get authentic Chinese food like this.

We ordered the soup base with tomato, the soup base with 3 pepper rating and one with 4 pepper rating. The tomato one was really good and the 4 pepper one was sour and really spicy. The one with 3 pepper rating is more like 2 pepper. Its all you can eat noodles but we only asked for one additional bowl of noodles each. We were all sweating by the end but it was really good. Be careful the bowl is very hot! They have other dishes too, will be going back to try!
